Duchy Nursery Cookery School - Meat Preparation & Cookery Masterclass

Wednesday, May 15th kicks off our first ever class, Meat Preparation & Cookery Masterclass

Arrival time is 9:45am and students will work in teams of two. Ideally, you’ll have booked in pairs, but if not, what a great way to make a new friend! The first three hours or so are devoted to combined instruction and hands-on preparation. You’ll start the day off with a tea or coffee in our Woodland Terrace Tipi where our Head of Food will review the topic, menu and day’s activities with the group. Depending on availability and seasonality, this may include picking from our own gardens and/or local foraging. Knives and aprons will be supplied for the duration, just remember to wear comfortable shoes and dress weather expectant. Small class sizes will promote interaction and discussion.

The day:

9:45 - Arrival introductions/housekeeping and settling into stations - Tea, coffee, cookies

10:15 - Begin session

13:00 - 45min break for lunch, held privately in the Tipi

13:45 - Chef’s choice demonstrations and learning discussions

15:00 - Finish & gift bags are given out

  • Trussing and jointing fowl

  • High heat to low and slow cooking

  • British vs Continental butchery

  • Utilising the entire beast/cut

Lunch Learning Menu - A collaborative cook-off!

A fantastic two course lunch with drinks will be prepared by the students and the chef, utilising some of the day’s work and local, seasonal and wild ingredients.
